Ham & Cheese Omelet: Breakfast Is Served

Ham & Cheese Omelet: Breakfast Is Served

 Hi everybody :)
"Welcome to another Breakfast Is Served Sunday!" If you're just tuning  in to my post, every Sunday I try to post a Breakfast Is Served, but since my daughter's injury my postings are limited. Jumbo Sour Cream Cinnamon Buns   were last breakfast post.

Today's post is about eggs, I'm making an omelet. Omelets are very simple to make and easy to customize to your taste. The most important thing to have when making omelets is a good nonstick pan. The recipe I'm sharing today is just a simple basic omelet and one of my favorites. It's time to crack some eggs and get it started...
Ham & Cheese Omelet
2 - 3 eggs
1/4 cup diced ham
1/4 cup shredded cheese
Salt and Pepper to taste
1 teaspoon Butter or Oil

In a medium bowl, beat the eggs; stir in the ham, cheese, salt and pepper
Butter the pan add the egg mixture,
cook over medium heat,  tilting the pan and lifting the edges of the omelet to cook the remaining mixture, about 2 to 3 minutes.
 Fold onto plate to served

Easy French Bread Pizza: Pizza in a Hurry

Easy French Bread Pizza: Pizza in a Hurry

Hi everybody :)
I'm still helping my daughter recover after her ankle surgery, so I will make this simple, without many pictures. This is one of the easiest way to have the great taste of homemade pizza without having to make and bake the dough yourself. Using store-bought French loaves can really be a time-saver for pizza in a hurry.

Easy French Bread Pizza
1 French bread loaf
Olive oil
Garlic powder or Garlic Salt
1 pound ground Italian sausage, beef, or chicken
1/2 cup pizza sauce
Pepperoni slices
Diced Ham, if desired
Bell Peppers & Onions, sliced and saute,
1 to 1 1/2 cups  Shredded Italian Cheese

Preheat oven to 350 degrees F. Crumble and cook sausage in medium skillet until brown. Set aside. Slice French bread in half lengthwise, coat each halve with olive oil. Place halves on a baking sheet bake until lightly toasted. Spread each slice evenly with sauce. Top with cheese, sausage, pepperoni, ham, bell peppers & onions, if using . Bake for 5 minutes or until cheese is melted. Cut and served.
What I Think:
This pizza can be made with whatever topping you may like, this is just a base recipe, so have fun and experiment.

The Taste: Great! My daughter really enjoyed it. I'm sure your family will too :)
  ENJOY! Come again...

Cheesy Ham & Tots Casserole: Breakfast Is Served

Cheesy Ham & Tots Casserole: Breakfast Is Served

Hi everybody :)
"Welcome to another Breakfast Is Served Sunday!" If you're just tuning  in to my post, every Sunday I try to post a Breakfast Is Served. Cappuccino Muffins were the last post. Today is the first breakfast post for the month of March. To kick it off to a great start introducing Cheesy Ham & Tots Casserole. The original recipe used hash brown but I figured tater tots would be fine; so here's what I did...

Cheesy Ham and Hash Brown Casserole
1 (32 ounce) package frozen hash brown potatoes (I used Onion Tater Tots; cut into pieces)
8 ounces cooked, diced ham
2 (10.75 ounce) cans condensed cream of potato soup
1 (16 ounce) container sour cream
2 cups shredded sharp Cheddar cheese (I used Colby & Monterey Jack Cheese)
1 1/2 cups grated Parmesan cheese (I omitted this)

(1 tbsp. sweet red pepper)
(1 tbsp. chives, divided 1 tsp. into the casserole & 2 tsp. sprinkled over top)

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.

In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese.

Spread evenly into prepared dish.
Sprinkle with Parmesan cheese. (Colby & Monterey Jack Cheese)
Bake 1 hour in the preheated oven, or until bubbly and lightly brown.
Serve immediately.

What I Did and/or Think:

Since I'm home alone I only did a small serving of this recipe; baking it in a small casserole dish for 25 minutes. The other changes are in Bold, Italic, & Purple

The Taste: The casserole had a great blend of flavors and was delicious. Definitely an A.G.R. (Another Great REPEAT).
I think this would make a great lunch or dinner meal also.

ENJOY! Come again...

This meal is soooo easy to prepare it doesn't really need a recipe. All it take is a few basic ingredients and dinner is ready in minutes. When I'm home alone and I want something quick, easy, and delicious for a serving of one; this is one of my g0-to dinner solutions.  Let's get it started...

For the sausage:
1-2 Johnsonville Four Cheese Italian Sausage links
1 tablespoon oil
water, enough to cover

In a skillet add sausage  and oil to water bring to a boil, reduce heat to medium. Cover and simmer for 12 minutes. Uncover and cook until golden brown, turning once. Cut sausages in a bias-slice. Set aside and keep warm.
For the pasta:
Hot Angel Hair Pasta, cooked according to the box
1 teaspoon garlic, minced
1 Tablespoon olive oil
2 tablespoons fresh basil, chopped
fresh mozzarella cheese, diced
1 medium tomato, diced
Lawry's Garlic salt, to taste if desired
Pepper, to taste if desired

In a skillet, sauté onion and garlic in olive oil until tender. Remove from heat and add to pasta along with cheese and tomato.

I really love Italian cuisine and this dish hit the spot, it  brushetta-like taste blends well with the pasta.

Broccoli-Stuffed Potato & Grilled Steak: A Steak & Potato Kind of Day

Broccoli-Stuffed Potato & Grilled Steak: A Steak & Potato Kind of Day

Hi everybody :)
I having a steak and potato kind of day. Steak and potatoes is one of my favorite meals. I'm sure it a lot of people favorites. I bet you might have an steak and potatoes variation in your meal planing rotation. Here's one of mine...

The Broccoli-Stuffed Potato

4 large baking potatoes, bake; see this
2 tablespoons + 2 teaspoons I Can't Believe It's Not Butter Spread, divided
2 1/2 cups frozen broccoli
1/4 package Southern Mills Cheddar Cheese Sauce Mix; prepared or 1/2 cup prepared cheese sauce
1/4 cup shredded cheddar cheese
Lawry's Garlic Salt to taste

I used Amy's quick and easy baking method  for baking the potatoes; set aside to cool slightly.
Meanwhile, steam the broccoli for 6 - 8 minutes, or until tender. Chop fine. Carefully scoop the potatoes flesh into a bowl, leaving the skin intact.
Add the broccoli to the potatoes along with the cheese sauce.

Top with shredded cheese and bake for 8 minutes or until cheese melts.

Marinade steaks overnight. Preheat grilled to 375 F. (I used the Super Pot.) Grilled steaks 8-10 minutes on each side or according to how you like your steaks.

Mini Bruschetta Pizzas

Mini Bruschetta Pizzas

Hi everybody :)
Remember the Ciabatta (Mini) loaves  I made a few days ago? I decided to play around with them and make mini bruschetta pizzas. Here's what I did...

Ingredients
Ciabatta (Mini)
Fresh Sliced Mozzarella Cheese
1 bunch Basil, finely chopped
Garlic, minced (I used 1 big elephant garlic)
Tomatoes, seeded and diced
Red Wine Vinegar (not shown)
Extra-Virgin Olive Oil to cover
Salt & Pepper to taste

Combine basil, garlic, a splash vinegar into a small contain with enough oil to cover. Season with salt and pepper. (This can be done ahead of time so the flavors can blend)
Heat oven to 350 F. Brush some of the mixture over the bread to coat. (Refrigerate leftover garlic mixture; great for dressings or marinades.) Top bread with diced seeded tomatoes.
Slice cheese withe-wise.  Spread cheese slices over the top.
Bake for about 10 minutes or until cheese melt. Sprinkle with extra salt & pepper, if desired, and serve
What I Think:
These were delicious. They can be sliced and served as appetizers or left whole served as snacks. They can also be made with French bread slices, homemade or store-brought. But the homemade version would taste the best :)
ENJOY! Come again....
