Cheddar Bay-Styled Salmon Croquettes


Hi everybody :)

I try to eat salmon once a week or least twice a month. I love it fresh, frozen, or canned; for today recipe, I'm using canned salmon. I find it's best to buy the cans in bulk at Sam's Club (you get 4 (14 3/4 oz.) cans for about $6.oo). 

The last time I was there, I  spotted a box of Red Lobster Cheddar Bay Biscuit Mix. So I figure, why not try it. I later came home, put it away and forgot about it... until today while trying to come up with what would make a great snack? The answer, croquettes!  But, not just ordinary salmon croquettes... no, no, nooooo... Cheddar Bay-Styled Salmon Croquettes. 

It came to me, just when I reach into the cabinet to get the salmon and remember the biscuit mix. Why not replace the flour in a ordinary croquette recipe with the biscuit mixture and add cheese? Me, being the ever-loving experimentalist  that I am :) had to  give this a try. Here's what I did...     

Cheddar Bay-Styled Salmon Croquettes
1(14 3/4 oz.) can salmon, bones removed; drained & reserved 2 tablespoons liquid
1 egg, beaten
1/3 cup onion, chopped
1/3 - 1/2 cup* Red Lobster Cheddar Bay Biscuit Mix  (I found this at Sam's Club)
1/2 teaspoon herb pack (it comes in the box with the mix)
1/3 cup cheddar cheese, shredded (I used finely grated Mexican Blend) (it was what I had)
Lemon Pepper & Salt, to taste
2 teaspoons baking powder
Panko Japanese Style Bread Crumbs (for coating)
Oil for frying

Heat about 1 inch of oil in a large, heavy skillet to oil to 350°F. 
Combine salmon, egg, onion, biscuit mixture, cheese, and seasonings in a medium bowl; set aside.
In a small bowl, mix reserved salmon liquid and baking powder. (Mixture will be bubbly, foamy, and white.) Stir into salmon mixture. (Don't over-mix)
Shape into balls (*add more biscuit mix only if needed; you want just enough for it to hold it shape).  Place crumb coating in a shallow pan or zip-lock bag. Roll balls in crumb coating, flatten slightly. Carefully lower croquettes into hot oil. (Do not over crowd).
Fry in batches for 3 -5 minutes on each side or until golden brown. Drain patties on paper towels. Serve with tartar sauce, mustard/ketchup and/or hot sauce, if desired.   
What I Think:
I absolutely LOVE the croquettes; full of flavor: tender flakes of fish embedded in an onions, herbs, and cheese dough wrapped in nice crunchy crumb coating. If you haven't try Panko bread crumbs yet, you must give it a try. I can't wait to make this again, so it will be REPEATED as often as possible. 

(A little side note, I first discovered the bread crumbs from Jane's blog, where I actually won a box, and been loving it every since. Jane has a super great blog, but don't take my word for it, stop by and see for yourself.)

Bourbon-Brown Sugar Orange Glazed Salmon

Hi everybody :)


Because I love salmon so much and still had half of the pack still in the refrigerator, I decided to share another recipe with you all. This recipe is sort of a combinations of two recipes that catch my attention. I took what I thought would be a great taste from both recipes and combined them together.  

Going by what I think is the best flavors of the two, I cooked the salmon  in a sauce flavored with brown sugar, orange juice, lemon zest. garlic, onions, and bourbon. Here's how I did it...
 
 Bourbon Brown Sugar Orange Glazed Salmon  partly adapted All Recipes and My Recipes

4 tablespoons butter 
1/2 cup packed dark brown sugar
1/4 cup orange juice
1/4 cup chopped green onions 
2 garlic cloves, minced  
1/2 teaspoon lemon zest 
Salt and Pepper to taste
4 (6oz.)  salmon fillets (about 1 inch thick)
1/4 - 1/3 cup bourbon whiskey (I eyeballed it
Melt butter in a large heavy skillet over medium heat. Stir in brown sugar and  next 4 ingredients
Season salmon with salt and pepper; place them on top of brown sugar mixture. Cook for 3-5 minutes on medium heat. 
Turn salmon, and pour bourbon around the fillets. Continue cooking for 3-5 minutes, or until fish flakes easily with a fork. Spoon glaze over the salmon, and serve.
 What I Think:

LOVE the smell of this cooking! I wish you all could have smelt it too :) The taste was wonderful, absolutely AMAZING!!!  This is my officially new best salmon recipe! R-E-P-E-A-T !   R-E-P-E-A-T !   What that spell?  YAAAaa!  REPEAT!!!

Salmon with Garlic, Lemon, & Dill

  
Hi everybody :)

Salmon is my all-time favorite seafood! When I first saw this on Pinterest, I knew I would be making it one day. It's a simple and easy recipe, that takes minutes to prepared. The butter, oil and garlic are blended together, spread over the salmon, then it's sprinkled with dill, salt and pepper and layered with lemon slices and baked. SIMPLE. QUICK. and EASY. My favorite recipe combination. 
Salmon with Lemon, Garlic & Dill adapted For the Love of Cooking
1 lb salmon fillet
2 tsp butter
1 tsp olive oil
1 clove of garlic, minced
Sea salt and freshly cracked pepper, to taste (I used lemon pepper)
Fresh dill, to taste
Lemon slices (
I used a Meyer Lemon)

Directions:

Preheat the oven to 450 degrees. Line a baking sheet with tin foil then coat it with cooking spray.
Combine the butter, olive oil, and garlic together then spread evenly over the top of the fish. Season with sea salt and freshly cracked pepper, to taste. Sprinkle freshly chopped dill all over followed by a layer of lemon slices. Place skin side down on the prepared baking sheet.
Place into the oven and bake for 10 minutes or until the salmon flakes easily with a fork. Remove from the oven and serve with additional slices of lemon if desired. Serve immediately. 

What I Did and/or Think:
 
The taste: With only a few ingredients this dish is pack with flavor. The salmon was deliciously moist and tender. I used a Meyer Lemon and sprinkled with lemon pepper for extra punch. REPEAT Is a MUST! Thanks Pam, for sharing this wonderful dish.

Tuna Melt Sandwiches with Tomato Onion & Herb  Rolls


Hi everybody :)

I couldn't wait to make sandwiches with the Tomato, Onion & Herb Rolls. I know they would have been great for roasted chicken or turkey breast sandwiches but,  I had all the ingredients for a tuna melt. Which I think would be great too, so tuna melts it is. Here's what I did...



















Tuna Melt Sandwiches with Tomatoes Rolls



















3-4 Tomato, Onion & Herb Rolls or whatever bread your like, but these are delicious
2 cans (5 oz.) water-packed chunk light tuna, well drained
1/4 cup mayonnaise
1/4 teaspoon celery seeds
1 teaspoon Mrs Dash Onion & Herb Seasonings, optional
1 tomatoes,  sliced thin
Cheese Slices (I used Grilled Cheese Melts)

Slice the rolls in half, horizontal, place on bottom halves in an 9 x 9 inch pan. 

Combine the tuna with mayonnaise and seasoning, if using, in a small bowl. 

Spread tuna mixture on top of each bottom halves.
  
Place 2 slices of tomatoes on top of tuna mixture overlapping each other.
 
Top each with a slice of cheese.

Place in the oven under the boiler until cheese melts about 15 seconds. Remove, and top with the top halves of the rolls. Heat 15 seconds more, if desired.

What I Think:

They were as delicious as I thought they would be, maybe even better. I didn't use much seasoning in the tuna mixture because the rolls were very flavorful. I'm going to, no, I have to try this with some type of pizza dish next :)  So I'll be making some more dough soon.

Hi everybody :)

I wanted to do a fish recipe today dealing with tilapia. I love tilapia, but my favorite fish is salmon.

One of major peeve is overcooked salmon. It got to be just right, tender, juicy pink flakes of fish.YUM! I looovvvvvve the way hubby cook it. He surprise me one anniversary, when I was too sick to go out and made a wonderful salmon dinner for us. IT WAS  DIVINE; at times he can really throw down in the kitchen. Ladies, there's nothing more sexy than a man who can cook and clean up afterwards. Uh.. uh.. uh... Well, enough about that, I don't want to be accused of over-sharing :)

While searching through my cookbook collection I came across this simple recipe and decided to give it a try.

Herb-Coated Tilapia adapted from Taste of Home Cookbook

















Ingredients
1/4  cup butter, melted
2/3  cup crushed butter-flavored crackers
2  tablespoons grated Parmesan cheese
1/2   teaspoon dried oregano
1/2  teaspoon dried basil
1/4  teaspoon garlic powder
1  pound tilapia fillets

 Directions

1) Place butter in a shallow bowl. In another bowl, combine the crackers, cheese and seasonings.

Dip fillets in butter, then coat with crumbs.
Fish in Butter




Fish Uncooked


















 












2) Place in a greased 13-in. x 9-in. x 2-in. baking  dish. Bake, uncovered, at 400° for 15-20 minutes
or until fish flakes easily with a fork.

Yield: 4 servings.

What I Did  and/or Think :
The original recipe use cod fillets, but I decided to use tilapia because that's what I had. This turn out to be really good. I did had to press down hard to get the coating to adhere to the fish, so maybe I'll try it next time with egg white in with the butter. I think I'll also play around with the flavors some more, so this is a repeat.

Fish Fry Coating Mix with Tilapia & A Bonus Recipe

Hi  everybody :)

I love the idea of making your own anything, so I was happy to find this recipe while browsing through one of my cookbooks,  Gifts That Taste Good . If you been reading my posts, yeah I'm still sticking to doing at least 1 recipe out of each book, I'm gonna do them one better, this is the second one from the same book! YEAAAA!!!! The first was Jamman' Muffins mmmmm MUST make again soon!  Alas, back to what I was saying, as the old adage goes, "homemade is best made". So with that in mind I gave this recipe a try. I was very pleased with the result, a flavorful crispy crust.


Fish Fry Coating Mix from Gifts That Taste Good


1 1/2 cups yellow cornmeal
1/4 cup all-purpose flour
1 tablespoon lemon pepper
2 teaspoons salt
1 teaspoon onion powder (I used Mrs. Dash Onion & Herb Seasoning)
1/2 teaspoon paprika

In a large bowl, combine all ingredients. Store in an airtight container.

Yield: about 1 3/4 cups of mix

To prepare fried fish: Dip fish in buttermilk and roll in coating mix. To cook, pour oil into a Dutch oven to a depth of 2 to 3 inches. Heat to 375 degrees. Fry coated fish, one piece at a time, about 4 to 6 minutes or until golden brown.

I didn't forget I promise y'all a bonus recipe, so here it is.....roasted potatoes. I know most people like fries with their fish; I like roasted potatoes. I know it might sound kinda of strange, but it's great. This is a very simple basic recipe with less roasting time in the oven.

Roasted Potatoes


2lbs. golden potatoes
2 Tbsp. olive oil
1 - 2 tsp. Mrs. Dash Onion and Herb Seasoning 
1 tsp. Garlic Salt
To serve:
butter
chives
sour cream

Cut potatoes in chunks and microwave (see note). Drain water. Place in large pan and drizzle with oil. Sprinkle with seasonings and bake 20 -25 minutes until tender in a 375 degree oven.

Note: Microwave potatoes in microwave about 10 minutes means less time in the oven. I roasted my potatoes for about 20-25 minutes or until tender in a 375 degree oven; after microwaving.
