Mushroom & Onion Yellow Rice

Mushroom & Onion Yellow Rice



Hi everybody :) 

Today recipe is very similar to the Veggie Rice recipe I posted back in October. I used the same rice combination because I love the favor of the two. Sauteed onions and mushroom are added to the rice instead of the veggie mixture. It's great served along-sided beef, chicken, or pork dishes.  Here's what I did...

Mushroom & Onion Yellow Rice
Ingredients:
1 medium onion; sliced
1/2 cup sliced mushrooms
2 tablespoons butter
1 1/2 cup long-grain white rice (I used Uncle Ben)
1  1/2 cup Par Excellence Yellow Rice
2 cup chicken stock; reduced sodium, homemade or store-brought
4 cup water
Salt & Pepper to taste 
Addition butter, if desired

In a very large frying pan over medium high heat, saute the onions and mushrooms with 2 tablespoons butter until tender, about 2-3 minutes.  

Add the rice mixture, stock, water, and salt & pepper. Bring to a boil over medium-high heat. 
Reduce heat to simmer, cover and cook for 20 minutes, or until liquid is absorbed, rice should be tender. Fluff with additional butter, if desired and served.

Green Bean Casserole, My Way

  Cheesy Green Bean Casserole

Hi everybody,

Everybody has a special way of preparing this classic dish to make it their very own, today I like to share my way. I like mines extra cheesy with bits of bacon throughout.  Here's how I do it...

Cheesy Green Bean Casserole
1 large onion, sliced
1/2 cup mushrooms, sliced
1 Large can Green Beans, drained
2 cans (10.3/4 0z.) cream of chicken soup
1 package (2.8 oz.) Oscar Mayer Real Bacon Recipe Pieces
1 package Southern Mills Cheddar Cheese Sauce Mix + 1 cup water  or  1 cup prepared cheese sauce  
1 (6oz.) canister Cheddar French Fried Onions, divided
1/4 teaspoon Worcestershire Ground Pepper Blend
1/2 teaspoon Rosemary, Basil and Citrus Salt or Lawry's Seasoned Salt 
3 tablespoon butter, melted
1/2 cup cheddar cheese (I like mild)

Saute onions and mushrooms until tender. Remove from heat.
In a large bowl mix green beans, onions/mushroom mixture and bacon bits. 
Add soups, cheese sauce, and 1/2 of French Fried Onions mix well. Add seasonings and butter, pour into a greased 13 by 9" baking dish. 
Cook at 350 for 25 minutes. Top with cheese and remaining French Fried Onions and cook 5 more minutes.
Green Bean Casserole has always been one of my favorites for family-get-togethers. I love this cheesy version of the classic casserole.

12/10/2021 Update: Cindy's daughter, Trina, here. I made my own version of this recipe using 2 bags of frozen green beans. Our oven isn't working, so I cooked the casserole in our Cuisinart 1800W 4lb Air Fryer Toaster Oven. I'm new at blogging, but I plan on experimenting often in the kitchen, especially with the Cuisinart. Also, to the people still reading and enjoying my mom's blog throughout years of inactivity, thank you all so much.

Loaded Potatoes: Pink Ribbon Recipe


Hi everybody :)

The name alone grab my attention to this recipe. I LOVE loaded potatoes. Comfort food at it best. These loaded potatoes are made using red potatoes topped with mushrooms, ham, green onions, sour cream, and cheddar cheese so they are fully-loaded, for a main dish in minutes :)

This recipe may be a good choice for cancer patients because it
is great for nausea, constipation, and for mouth sores without the onions and ham; three of the side effects of cancer treatments.


Loaded Potatoes adapted Betty Crocker Living with Cancer Cookbook
















Prep Time: 15 Minutes      Start to Finish: 20 Minutes      4 servings
4 medium unpeeled red potatoes
1 package (8 oz) sliced fresh mushrooms (3 cups)
3/4 cup chopped fully cooked ham (not shown) (I used
packaged diced  ham)
8 medium green onions, sliced (1/2 cup)
1/8 teaspoon ground red pepper (cayenne)(I use Mrs. Dash Onion & Herb Seasoning)
1/2 cup reduced-fat sour cream
1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz.) ricotta or mozzarella. (I used mild cheddar cheese)

1. Pierce potatoes with fork. On paper towel in microwave oven, arrange potatoes about 1 inch apart in circle. Microwave uncover on High 8 to to 10 minutes or until tender. (Or bake potatoes in 375 F oven 1 hour to 1 hour 30 minutes.) Let potatoes stand until cool enough to handle.

2. Meanwhile, spray 4 Quart Dutch oven with cooking spray; heat over medium high heat. Add mushrooms, cook 1 minute, stirring frequently. Reduce heat to medium; cover and cook 3 minutes. Remove from heat. Stir in ham, green onions and red pepper. Cover, let stand 4 minutes. 



 















3. Split baked potatoes in half lengthwise; fluff with fork. Spread  1 tablespoon sour cream over each potato half. Top each with ham mixture and cheese.

What I Did and/or Think:
The only change I did to the recipe was used Mrs. Dash Onion & Herb Seasoning instead of cayenne pepper and mild cheddar cheese instead of sharp.

This Taste: Like I so before I LOVE loaded potatoes! Fully-Loaded, with diced ham too, makes this dish a GREAT REPEAT!
