Handy Substitutions
INGREDIENTS AMOUNT SUBSTITUTIONApple Pie Spice ------ 1 t. ---- 1/2 t. cinnamon + 1/4 t. ginger & 1/4 t. ground cloves
Biscuit Mix ------------ 1 c. ---------- 1 c. pancake mix
Baking Powder -------- 1 t. ---------- 1/4 t. baking soda + 1/2 t. cream of tartar, or 1/4t. baking soda + 1/2 c buttermilk (decrease liquid by 1/2 c.)
Brown Sugar ---------- 1 c. packed ----- 1 c. granulated sugar + 1/4 c. molasses (decrease liquid by 1/4 c.)
Butter --------------- 1 c. -------------- 1 c. shortening, or 7/8 c. oil or lard
Buttermilk ---------- 1 c. -------------- 1 T. lemon juice or vinegar + enough milk to make 1 c. Let stand for 5 minutes. , or 1 c. milk + 1 1/2 t. cream of tartar, or 1 c. sour cream or yogurt
Catsup/Ketchup -------------- 1 c. ---------------- 1 c. tomato sauce + 1 t. vinegar & 1 T. sugar
Chili Sauce ---------- 1 c. ------------------- 1 c. tomato sauce + 1/4 c. brown sugar, 2 T. vinegar, 1/4 t. cinnamon, dash clove & dash allspice
Chocolate, semi-sweet (for baking) 1 oz. sq. ----- 1 oz. sq. unsweetened chocolate + 4 T. sugar, or 1 oz. semi-sweet chocolate chips + 1 t. shortening
Chocolate, Sweet German (for baking) 1 oz. sq. ----- 1 oz. semisweet + 1 1/2 t. sugar or 1 oz. milk chocolate
Chocolate, unsweetened (for baking) 1 oz. sq. ------ 3 T. unsweetened baking cocoa + 1 T. shortening or oil
Corn Syrup ----------- 1 c. ----------------- 1 1/4 c. sugar + 1/3 c. water, or 1 c. honey
Cream, Half-and-Half -- 1 c. ---------------- 7/8 c. milk plus 1 T. butter, melted
Cream, whipping -------- 1c. ------------------- 1 c. evaporated milk, or 3/4 c milk + butter, melted
Cream, light ---------------- 1c. ------------------- same as Cream, whipping
