A little southern hospitality, Brown Sugar Pound Cake

Brown Sugar Pound Cake, A little Southern Hospitality

Hi everybody  :)

As a down-home-southern girl, I felt it was my duty to have pound cake recipes on my blog. Every southern girl gotta have at least one bundt pan in her kitchen.

If you have noticed, my Pinterest board has over 600 pound cake recipes. So here's one of many I tried.

The recipe I used is Brown Sugar Pound Cake from Southern Living. I love the caramel sweetness of this cake. No icing was needed. The only change I did was add the nuts to the bottom of the bundt pan before pouring in the batter, so when I flip it, the nuts will be on top.

Every time I have a slice of pound cake, it brings back sweet memories of my mom. (She passed away 8 yrs ago due to breast cancer.) She never failed to always have a pound cake under her glass cake dome. Whenever company stopped by, they always left with several slices "for the road" they would say.

ENJOY!

Me & My George Foreman Grilled Lemon-Orange Glazed Chicken

Grilled Lemon-Orange Glazed Chicken

Hi everyone!

I know everyone has heard of Pinterest by now. I pinned so many grilled chicken recipes that I was inspired come up with my own. I wanted something fast and easy to cook to avoid the heatwave we're having in Georgia, so I came up with this:

For the Chicken:
1 tsp. lemon pepper
1 tsp.rosemary garlic seasoning
1/2 - 1/4 tsp. sea salt
4 boneless skinless chicken breast

Mix seasonings together, rub on chicken breast. Place in zip lock freeze bag and let marinade for at least 2 hours. (This would be great if you did it at night before going to bed, so it would be ready the next day.)  Grilled according to instructions, about 5 minutes set aside.

For the Lemon-Orange Glaze:
1/2 cup Orange Marmalade
1/2 tsp. lemon zest
1/2 tsp. lemon juice
about 1/4 - 1/3 cup simple syrup (2 parts water and 1 part water or equal parts of both, heated to dissolve sugar, and cooled to room  temperature; can be made in advance and refrigerated)
1 tsp. cornstarch

Combine first 3 ingredients in a small saucepan over low heat until well mix and marmalade melts. Combine the simply syrup and cornstarch add to marmalade mixture, heat until thicken about 1 minute. Pour over warm chicken.

I love how this turned out. Lemony sweet and tangy orange. I think I'll try this glaze on my favorite fish, salmon, next.  I served it with streamed broccoli and rice along the side.

My First Post, Red Velvet Cake!

Red Velvet Cake: My First Post!!!!

Red Velvet Cake

Hi everyone :)

First, I like to thanks for being patient with me. I still trying to get the hang of how to blog....

For my first post, I would like to share my husband's favorite cake, Red Velvet.  I made it on our anniversary (also his birthday), April 11th.  I think he arranged it like that so he won't forget. Ha ha.  ;)

The cake layers come from Better Homes and Gardens. I wanted to make a bigger and taller cake, so  I doubled the cake layers and baked it in 4 round 10" cake pans for about 30 minutes. I used this cream cheese frosting recipe from Allrecipes.com. I prepared the layers about 2 weeks ahead and froze them.

I was very please with the result; so was hubby. He's still waiting on a repeat performance.  :)  I love nuts on red velvet cake, but left them off because he doesn't. Do any of you all love nuts on your cakes, or what is your favorite cake? I would love to hear from you. I'm a Carrot Cake nut!
