Easy Peanut Butter Cookies: Only 3 Ingredients

Easy Peanut Butter Cookies: Only 3 Ingredients

Hi everybody :)
Sorry about not posting sooner, I been really busy packing up my daughter stuff in her apartment.  She is taking her finals this week,  the semester is almost over!  Next stop....  GRADUATION! Yipee!!! Then, I'll be back home :) These cookies below are ones she loves to bake because they are soooo easy, but since she still can't walk yet; she ask me to bake them for her. They are peanut butter cookies with just three ingredients and contains no flour!  Super easy right? I know. So, let get it started.

Easy Peanut Butter Cookies
1 cup peanut butter (I used Jif Creamy)
1 cup sugar (I used 1 part granulated and 1 part brown sugar)
1 egg, slightly beaten
1/2 teaspoon vanilla extract, optional

Preheat oven to 350 degree. Line cookie sheet with parchment paper.
Combine all the ingredients in a medium mixing bowl until well blended.
Drop cookie dough by tablespoonful onto prepared sheet. Use tines of a fork dipped in sugar to make a crisscross pattern on top of each cookies if desired.

Bake until golden brown, about 12 - 15 minutes. Yield: 2 dozen.

What I Did and/or Think:
Well, I did make a few changes to the three ingredients formula by adding brown sugar for a more chewier texture  and and vanilla. The changes I made are in Bold, Italic, and Purple
For Easy Peanut Butter Blossom version: Shape the dough into 3/4" ball before baking. Bake for about 8 - 10 minutes on ungreased cookie sheet. Press chocolate kiss into the center of each cookies, like in the instructions found here. Yield about 3 dozen.
The Taste: These cookies were GREAT! Love the flavor and the chewiness, definitely worthy of REPEATING!
ENJOY! Come again...

Easy Chunky Peanut Butter Cookies
I been making these cookies for the past few weeks about every 3 to 4 days. My family really love them. I changed the recipe up a little more by adding 1/4 cup granulated sugar and 3/4 cup brown sugar, using extra chunky peanut butter and adding 3/4 cup mini Reese's Pieces peanut butter chips. Scoop out onto parchment lined cookie cookies sheet flatten slightly; cookie don't spread much. Baking them at 350 for 8 - 10 minutes

Chocolate Chips Cookies: Chewy or Crispy

Chocolate Chips Cookies: Chewy or Crispy

Hi everybody :)
I promised a recipe was coming soon so here it is, Chocolate Chip Cookies. I know, I know there are thousand of chocolate chip cookie recipe out there, but this one caught my attention because with few changes; you can make your cookies chewy or crispy. You decide. Anna Olson, Pastry Chef at Canada Food Network, noted for crispy cookies omit the cornstarch and replace the baking soda with baking powder. Now, let's get it started...
Chocolate Chip Cookies
3/4 cup unsalted butter, softened
1 cup brown sugar
1/4 cup granulated sugar
1 egg
2 teaspoons vanilla extract
2 cups all purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
8 ounces bittersweet chocolate, cut into chunks (I used 1 cup milk chocolate chips)

In an electric mixer cream together butter and sugars until smooth and light in color, about 2 minutes with stand mixer

Add egg and vanilla and blend in.
In a bowl; mix together flour, cornstarch, baking soda and salt. Stir in chocolate chunks.
(Dough can be refrigerated at this point and baked about an hour later, or shaped and frozen following the direction here  for an easy make-ahead recipe. If baking from a frozen dough add about two more minutes to baking time.)

Drop by tablespoons onto a greased baking sheet in an oven preheated at 350 degree. (I used parchment paper.) Bake for 8-10 minutes, until golden brown around the edge.

What I Did and/or Think:
The changes I made are in Bold, Italic, and Purple.   Brown sugar also helps when making a chewier cookies especially dark brown sugar. Sometime when making cookies that call for brown sugar I like to use 1 part dark brown and 1 part light brown to get the amount of chewiness I love.

The Taste: I love the chewy chocolatey taste of these cookies and so does my daughter. She requested more after class.

How do you like your chocolate chip cookies? Either way you choose, I think you will find this recipe a winner, so they're definitely worthy of REPEATS.
ENJOY!  Come again...

Ham & Cheese Omelet: Breakfast Is Served

Ham & Cheese Omelet: Breakfast Is Served

 Hi everybody :)
"Welcome to another Breakfast Is Served Sunday!" If you're just tuning  in to my post, every Sunday I try to post a Breakfast Is Served, but since my daughter's injury my postings are limited. Jumbo Sour Cream Cinnamon Buns   were last breakfast post.

Today's post is about eggs, I'm making an omelet. Omelets are very simple to make and easy to customize to your taste. The most important thing to have when making omelets is a good nonstick pan. The recipe I'm sharing today is just a simple basic omelet and one of my favorites. It's time to crack some eggs and get it started...
Ham & Cheese Omelet
2 - 3 eggs
1/4 cup diced ham
1/4 cup shredded cheese
Salt and Pepper to taste
1 teaspoon Butter or Oil

In a medium bowl, beat the eggs; stir in the ham, cheese, salt and pepper
Butter the pan add the egg mixture,
cook over medium heat,  tilting the pan and lifting the edges of the omelet to cook the remaining mixture, about 2 to 3 minutes.
 Fold onto plate to served

Southern Potato Salad: Springtime Picnic

Southern Potato Salad: Springtime Picnic

Hi everybody :)
Springtime is in the air and nothing says Spring like a down home picnic. When I think of picnic one of the first thing that come to mind is potato salad. This is one of those recipes I'm sure everyone like to change or add a special ingredient to  make it there very own. I like to keep it simple; not only with the ingredients, but my way of mixing it. Here is my version of the Southern Classic...

5 lb bag russet potatoes, peeled, diced & cooked
1 cup mayonnaise, use more if needed
1 - 2 tablespoons pickle radish
1 teaspoon celery salt, see below for homemade
1/4 teaspoon freshly grind Black Pepper
1 large or 5 mini sweet bell pepper(s), (2/3 - 3/4 cup) diced
1 tablespoon prepared mustard
2 tablespoon finely chopped onion
4 hard-boiled eggs
Paprika

In a large combined the mayonnaise and the next 6 ingredients, stirring until combined. Add the potatoes. Peel   the eggs and dice 3 of them, saving one for garnish. Fold in the diced eggs  to potato mixture. Slice the reminding egg, place slices on top of the salad, sprinkle lightly with Paprika. Refrigerate for about 2 hours for flavors to mellow. Serve.

P.S. I made homemade celery salt. Following this recipe and adding 1 teaspoon celery seed.
ENJOY! Come again...

Easy French Bread Pizza: Pizza in a Hurry

Easy French Bread Pizza: Pizza in a Hurry

Hi everybody :)
I'm still helping my daughter recover after her ankle surgery, so I will make this simple, without many pictures. This is one of the easiest way to have the great taste of homemade pizza without having to make and bake the dough yourself. Using store-bought French loaves can really be a time-saver for pizza in a hurry.

Easy French Bread Pizza
1 French bread loaf
Olive oil
Garlic powder or Garlic Salt
1 pound ground Italian sausage, beef, or chicken
1/2 cup pizza sauce
Pepperoni slices
Diced Ham, if desired
Bell Peppers & Onions, sliced and saute,
1 to 1 1/2 cups  Shredded Italian Cheese

Preheat oven to 350 degrees F. Crumble and cook sausage in medium skillet until brown. Set aside. Slice French bread in half lengthwise, coat each halve with olive oil. Place halves on a baking sheet bake until lightly toasted. Spread each slice evenly with sauce. Top with cheese, sausage, pepperoni, ham, bell peppers & onions, if using . Bake for 5 minutes or until cheese is melted. Cut and served.
What I Think:
This pizza can be made with whatever topping you may like, this is just a base recipe, so have fun and experiment.

The Taste: Great! My daughter really enjoyed it. I'm sure your family will too :)
  ENJOY! Come again...
